Of all the places we dined during our trip to Jackson Hole, Wyoming, I felt most at home at Persephone Bakery.
There are two locations - one downtown and one in Wilson. This restaurant group also own Picnic, where we had breakfast on our very first day.
The Wilson location is in a small shopping plaza. It was a beautiful, sunny day and the bakery doors were wide open.
Antique mirrors hang above the pastry case, listing the coffee and tea drinks.
Much like Picnic, Persphone also has incredible looking croissants, muffins and breads.
The aesthetic of the cafe was wonderfully whimsical. It felt like the love child of Tatte Bakery (in Boston) and Alice in Wonderland.
This set of four paintings, inside the portrait trim, created the most adorable and cozy corner.
We hopped in line, menus in hand, attempting to narrow down what we wanted. As you can tell from the volume of order numbers they gave us, we each selected multiple things.
At Picnic, the girls loved the iced honey lavender latte. On this morning, they tried it hot. One friend said, "This is just so delictable. And you have to note the beautiful presentation."
I forgot to snap a photo of it, but I was sipping on a London Fog, which is Earl Grey tea, steamed milk and vanilla extract. It's the most comforting drink.
To begin, I ordered one slice of the banana bread with chocolate frosting. This piece was as tall as my head!
The banana bread was fantastic - not too dry, not too moist. It had a strong banana flavor, but not overwhelmingly so. And the frosting had the type of consistency where you could taste the granules of sugar in every single bite.
Two of the girls ordered the egg sandwich on a croissant. It came with bacon, gruyére cheese, avocado and a dijon aoili. This is what breakfast dreams are made of.
When I asked how it tasted, one friend replied, "The croissant is light and flaky. There is such a generous amount of ripe avocado in here! And the aoili has a little syrupy flavor to it which is really nice. I give it a 10/10."
Across the table, a friend was enjoying the quiche Lorraine.
She raved, "The quich is light and fluffy. It's super flavorful. The bacon is salty, in the best way. The greens on the side are dressed perfectly and help to cut the richness of the quiche."
Directly next to me, a friend was digging into the salmon and avocado bowl.
She had been to Persphone before and had enjoyed this same dish on her last visit. She said, "When I had this a few years ago, there used to be half an avocado as part of this plate. Now it's a less generous portion and they're serving it as a purée." Despite that disappointment, she added, "The smoked salmon is delicious and the pickled veggies are great."
I wound up ordering something that was listed as a side dish, but came in a huge portion. It was the kale and cauliflower hash with lemon tahini, and I added a fried egg on top.
This may not look like much, but it was fantastic. The kale and cauliflower were cooked perfectly and drenched in the tahini. Score!
As some of you may know, I collect mugs when I travel. I saw this blush pink one by the cash register and I just knew I had to have it. It was my first souvenir of the trip!
