Coming Soon: Chef Will Gilson's Puritan & Co.

It is well documented that I have a crush on local, culinary boy wonder Will Gilson. I fell his for charm and cooking chops during my first trip to Garden at the Cellar back in March 2009. Then I dragged my entire family to his take over at Adrian's in Truro on Cape Cod last summer.

When Will announced he would be selling Garden at the Cellar I was devastated. What about the rosemary French fries?

For the past few months the Boston food reporters and bloggers have been following Will as he prepares to open his newest venture. The initial articles shared that his restaurant would be called bridgestreet (yes, lower case b) and that it would be located in Inman Square in Cambridge.

On Monday, Boston Magazine's Chowder Blog reported that Will has decided to change the name of the restaurant to Puritan & Co. The name is partially inspired by the space (which used to be the Puritan Cake Company in the early 1900s) and partially to reflect the New England focus of the menu.

Apparently Will is learning as he goes with his first "baby" as evidenced by this photo:

No matter the name of the restaurant, I will surely be there when it opens.
